Bon Appétit Says KC's Buck Tui BBQ is Leading Barbecue's Third Wave
Bon Appétit spotlighted a new generation of American pitmasters redefining the craft, and Buck Tui BBQ is front and center as an example of barbecue's "third wave."
What’s The Third Wave?: According to the article, Buck Tui’s pitmaster Ted Liberda is a part of the “New Guard of American Barbecue”. After the first wave established regional styles like KC, Memphis, and Texas, and the second wave brought craft BBQ reverence to the 2010s, the third wave is being led by first- and second-generation immigrants bringing their home cultures to the smoker.
Thai-B-Q: Liberda marinates brisket in a Thai-inspired "heavenly seasoning" of coriander, ginger, and granulated garlic, smokes it over oak for 16 hours, then uses it in dishes like pad Thai and brisket rangoons. He describes it as Kansas City barbecue with Thai inspiration, not fusion.
