The Parker Hollow, a highly anticipated raw bar and restaurant, has opened its doors in downtown Parkville.
Return of the Chef: The team behind The Parker Hollow is Chef Jonathan Justus and his wife, Camille Eklof. Justus is no stranger in the KC culinary scene; he was nominated as a James Beard finalist in 2016 and has previously owned Justus Drugstore in Smithville and Black Dirt in South Plaza. He was also a consultant for Gizmo’s Tavern which is still open in Smithville.
On the Half Shell: The Parker Hollow is located at 100 S. Main St. in downtown Parkville, in renovated 175-year-old building that was the former home of Frank’s Italian Restaurant. The menu offers West Coast oysters, tinned seafood, and sustainable coastal fare.
